These little beauties are home made Jaffa cakes but with Gin in the jelly...
The base is 2 eggs, 50 g caster sugar, 50g plain flour...add the eggs and sugar and beat for about 4 minutes over simmering water - or until pale and fluffy - add the flour until combined.
I then added only a small amount to bun cases - and cooked for 8 mins at 180 - take out of cases asap when come out of the oven - do not over cook them - think I did..well that's what my testers said...next time..............
Then make the jelly. Line a tin with greaseproof paper. Make an orange jelly with 65ml boiling water - when dissolved and nearly cool - top up to 125ml with gin or anything else you fancy. Pour onto the paper and leave to set in the fridge.Once set cut out circles - the perfect size for me was to use a champagne flute.
Turn over your bun bases
And top with the Gin Jelly
Top with melted chocolate....hey presto......
