Saturday Cookies

Well its Saturday night......................X Factor - for those staying in - those off to a Bonfire - enjoy and be careful....
Baked these today by request of eldest - Rebecca..
They are Blueberry and Cranberry Cinnamon Cookies........and they are yummy....................
Easy to make otherwise I would not have done them....here goes...
225g butter
140g caster sugar
1 egg yolk
2 tsp vanilla extract
280g Plain Flour
1 tsp ground Cinnamon
pinch of salt
55 g dried Blueberries
55g dried Cranberries
55 g pine nuts chopped

Oven 190/c 375/f Gas Mark 5 10-15 mins
Line 2 baking trays
Cream butter and sugar until light and fluffy - beat in egg yolk and vanilla extract.
Sift flour, Cinnamon and salt into the mixture
Add Blueberries and Cranberries - stir till all combined
Scoop about a tablespoon of mixture and roll into a ball - then roll in the chopped pinenuts.
Place on the baking tray and slightly flatten - allow for spread.
Pop in the oven

Honestly very yummy
Have a good Sat night and a good Sunday - off shopping in York and out for tea with hubby...feel a Sarah pressie coming on

  1. Sarah, you're killing me with the food posts. i can gain weight just looking at it, and I have to say if these were any where I could get my hands on them they'd be GONE! Might have to give these a try for Christmas.

  6. Shortening is vegetable fat used for making cakes, pies pastries etc. Some people used lard. I use Crisco brand. Honey, when you get here I will make you a whole cake! Come on lottery numbers!
