Baileys cheesecake for a Monday morning

Morning.......wow did it rain yesterday - and most of last week.....so thought I would cheer you up with this I made it's a cheesecake - a cooked one....a Baileys cooked cheesecake - and I can honestly say - it is the best cooked cheesecake I have tasted in a long while....took it over to sister in laws - and it went down very well
Though they always crack with me - that is where crumbled up Cadbury's chocolate flake comes in handy - you know the 4 packs - bought 2 packs to be on the safe side - did not use them all - but they so were nice with a cup of coffee.......
So here I am - cut yourself a slice and sit down...especially you Caroline as I promised you the first virtual slice.....
There seems a lot of mixture - but its worth it and Philli cream cheese is on offer at the moment in Tesco's so that's even better................

Pre-heat oven to 180oc/gas 4 and grease a 23cm loose bottom cake tin.

Mix 8oz(225g) crushed digestive biscuits with 3oz (30g) melted butter and press on bottom of tin - it may look at this stage that it is not setting together - but when you cook it the mixture and biscuits stick together so no worries.....
Mix 2LB (900g)cream cheese - I know I thought - how much!!!!.. with 11oz (300g) caster sugar, add 175ml(8fl oz) Baileys -niiiiice. Mix in 4 eggs - 1 at a time...., then add 225ml (8floz) soured cream, 1 tbsp vanilla extract, and 4 tbsp Plain Flour....
Pour into tin
Pop in the oven for 1 hour
Turn off and leave in oven till cold to prevent cracking....did not happen - mine cracked....call in the choc flake...
Pop in fridge
Invite some mates round.....and tuck in!!!!

  3. I have a nice cup of hot coffee here that would go divinely with this cake. IS there any left? Thanks for the recipe. I'll give it a try. My cheesecakes always crack, never thought of covering it up with chocolate. MMMMmmmm.
